I like to open a bottle of wine with dinner, but the truth is, I usually don't want to share an entire bottle with another drinker at the table. Drinking too many glasses makes it harder to fall asleep, harder to wake up, and harder to get through the next day. Opening a bottle of wine is like a promise.
Of course, there are plenty of wine-saving devices designed to solve this problem, so I don't have to choose between a hangover and not drinking my favorite Chinon. Some of these gadgets suck air out of the bottle; others push gas into it. One of them lets you suck a little bit of wine through the needle in the cork, while also adding gas to fill the space. I've tried them all and they're...good. Some of them work better than others. Some seem to suppress the aroma of the wine (that's part of your tasting!), some are quite expensive. (I do like those winged stoppers that keep the champagne bubbly.)
